Homemade Coconut Cream Pie

  • 1 cup (240ml) half and half
  • 1 cup (240ml) unsweetened canned coconut milk
  • 4 large egg yolks
  • 3 tablespoons (45 grams) unsalted butter , cut into tablespoon-sized pieces
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon coconut extract (optional)
  • 1 and ½ cups (105 grams) toasted sweetened shredded coconut

  • 1 cup (240 ml) cold heavy whipping cream
  • ¼ cup (30 grams) powdered sugar
  • 1 teaspoon pure vanilla extract
