Fluffiest Vegan Pancakes

These pancakes are fluffy, light, soft and pillowy. I used self raising flour which is a complete game changer making the pancakes so fluffy as SR flour already has all the right amounts of raising agents added in there. I love to serve them with either vegan butter & maple syrup OR fresh fruit & coconut yoghurt. ✌

Ingredients
  • 200g (7oz) self raising flour
  • 270ml (1.15c) dairy free milk
  • 3 to 4 tbsp coconut sugar or light soft brown sugar
  • Pinch of salt
  • Coconut oil for frying
Steps
  1. Mix all the dry ingredients together in a mixing bowl or giant jug.
  2. Whisk in the dairy free milk until you reach a thick but pourable pancake batter. (Like the consistency of thick yoghurt).
  3. Heat your frying pan to a medium heat setting with a little coconut oil.
  4. Once the pan is hot, add 2 tbsp of pancake batter (per each pancake) to the hot pan.
  5. Cook until you see bubbles forming on the surface of the pancakes, then flip them over to cook on the other side for about 1 to 2 mins until both sides are golden.
  6. Plate up your pancakes. Serve with vegan butter & maple syrup OR fresh fruit & yoghurt OR whatever you like!
