Easy Chicken Enchiladas {Ready in 30 Minutes!}
Ingredients

  • 6 tablespoons whole wheat or all-purpose flour
  • 4 teaspoons ground chili powder
  • 2 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 4 tablespoons tomato paste
  • 4 cups vegetable broth
  • 2 teaspoon apple cider vinegar or distilled white vinegar
  • Freshly ground black pepper, to taste

  • 1 ½ cups cooked shredded chicken
  • 2 cups easy enchilada sauce, divided
  • 8 corn or flour tortillas (see note if using flour tortillas)
  • 2 ½ cups shredded Mexican-blend cheese, divided
  • salt and pepper, to taste
  • optional toppings: diced onions, chopped cilantro, sour cream, shredded lettuce, cotija cheese
