  • 1 lb chicken breast or thighs (I prefer skinless and boneless)
  • 1 can(s) crushed fire roasted tomatoes, 14.5 oz.
  • 1 c mushrooms (sliced or whole, your choice)
  • 1 green bell pepper, sliced
  • 1 onion, chopped
  • 1 garlic glove, minced
  • ¼ c dry red wine or broth
  • 1 Tbsp tomato paste
  • ¾ tsp dried oregano
  • ¾ tsp salt
  • ¾ tsp pepper
  • cooked rice
