  • 2 eggs
  • 200g flour (1 ¼ cups)
  • 4g baking powder (1 teaspoon)
  • 1.5g baking soda (¼ teaspoon)
  • 1.5g ground cinnamon (¾ teaspoon)
  • 5g kosher salt (1 ¼ teaspoons)
  • 225g shredded peeled carrots (2 to 3 medium-sized carrots or 2 ½ cups)
  • pam or other nonstick cooking spray (optional)
