Shirley’s Instant Pot Chicken Soup (using frozen thighs)
Oct 19, 2018: I decided to make chicken soup, but the chicken was frozen. It worked just fine to make the soup with the frozen bone-in, skin-on thighs. Yay!! No need to wait for thawing.

Optional: when serving, add cooked rice or noodles to soup bowls. Top with fresh Parmesan cheese.

NOTE: allow about 5-6 carrots, 2-3 celery stalks, one whole large onion. Some get used in large chunks for cooking the chicken to flavor the broth, most get chopped for the soup.

Total time from frozen chicken to serving: about 90 minutes.
Makes 3+ quarts or so.
Ingredients
  • subheading: For cooking chicken:
  • 2 to 2-½ lb frozen chicken thighs - bone in, skin on
  • 1 to 2 tsp salt, to taste
  • 1 to 2 tsp pepper, to taste
  • 3 to 4 large garlic cloves, minced
  • Sage
  • Basil
  • Thyme
  • Rosemary
  • (Celery seed ONLY if not adding a celery stalk)
  • ½ onion, cut in half (IOW, quartered)
  • 1 to 2 carrots, cut into 3-inch chunks
  • 1 celery stalk, cut into 3-inch chunks
  • 3 to 4 regular cups water or broth (NOT the little measuring cup that comes with the IP)
  • subheading: For veggies:
  • 2 cups carrots (3 large), cut into ½ inch chunks
  • 1 to 1-½ cups (2 to 2-½) celery, cut into ½ inch chunks
  • Other half of onion, cut into ½ inch chunks
  • To add with veggies - more seasonings to taste, if needed
Steps
  1. Add water to the IP. Add all seasonings, ½ onion, chunked carrots and celery. Add Chicken thighs. Set on High for 8 minutes. Then 10 minutes NPR.
  2. Cut up soup veggies about ½ inch thick while IP cooks chicken .
  3. Remove chicken, onion, carrots, celery from IP. Set chicken out to cool. (I threw away onion and celery pieces, as I’d added them just for flavor ... and gave the carrots to my dog.)
  4. Add chopped veggies for soup, more seasonings if needed, to taste. Set IP to 4 min high, quick release.
  5. While veggies cook in IP, remove chicken from bones and tear into bite-sized pieces.
  6. When veggies done, add the chicken pieces to the pot, stir. Set IP for 1 minute on High, quick release.
  7. For serving (OPTIONAL), add cooked rice or noodles to each bowl. Top with grated or shredded fresh Parmesan.
