This recipe takes the traditional Cowboy Cookie, which is usually dry and boring, and translated it into a Cowboy Blondie. They are moist and delectable, loaded with chocolate chunks, oatmeal and coconut, and drizzled with a candied pecan topping.
Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • ½ tsp baking soda
  • ½ tsp kosher salt
  • 1 cup old-fashioned oats
  • ½ cup shredded sweetened coconut
  • 1½ cups semi-sweet chocolate chips
  • 1½ cups chopped white chocolate

  • 1 cup coarsely chopped toasted pecans
  • ½ cup brown sugar
  • ¼ cup butter
  • 3 tbsp whole milk
  • 1 tsp vanilla extract
  • ½ cup icing sugar
