Ingredients

  • 2 cups pumpkin diced

  • ½ cup frozen peas thawed
  • 1 ½ cups panko breadcrumbs
  • ½ cup self-raising flour
  • 150 g fetta crumbed
  • 5 eggs
  • ⅓ cup olive oil
  • 1 pinch salt and pepper *to taste
  • 1 lemon cut into wedges *to serve
  • 1 packet mixed salad *to serve
