Bacon and egg sweet potatoe
Ingredients
  • Servings: 1
  • INGREDIENTS
  • 1 sweet potato
  • 2 slices of bacon, cooked
  • 2 eggs, scrambled
  • Salt, to taste
  • Pepper, to taste
  • Green onion, for garnish
  • PREPARATION
  • Cut sweet potato into thin slices, about ¼ inch thick.
  • Place in toaster and set it to the maximum cook time. When it pops, flip the sweet potato slices over and toast 1 more time. Depending on the strength of your toaster and your preferences, you may need to toast it 1 more time after that.
  • Remove from toaster and let cool enough to handle.
  • Place two slices of cooked bacon on the sweet potato toast.
  • Scramble eggs with salt and pepper and place on top of bacon.
  • Garnish with green onion and enjoy!
