Easy 30-Minute Vegan Chili
Ingredients
  • 1 white or yellow onion, approx. 2 cups
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp mild chili powder
  • 1 tbsp dried oregano
  • 2 tsp ground cumin
  • ½ tsp red pepper flakes, optional, for spicy chili
  • 1 15 oz can kidney beans, drained and rinsed ( 1.5 cups, see notes)
  • 1 15 oz can pinto beans, drained and rinsed ( 1.5 cups)
  • 1 28 oz can diced tomatoes, with the juices
  • 1.5 cups vegetable broth
  • 1 tsp cocoa powder
  • ½ tsp pepper
  • sea salt to taste, if needed
