  • ⅓ cup (38 g) dutch-processed cocoa
  • 1 teaspoon (5 g) baking soda
  • 1 cup (224 g; packed) dark brown sugar
  • ⅓ cup (80 g) granulated sugar
  • 1½ teaspoon (6 g) kosher salt
  • 2 large eggs, room temperature
  • 1 tablespoon (22 g) vanilla paste or extract
  • 2 ⅓ cups (340 g) chocolate disks, dark chocolate bar broken into small pieces or chocolate chips (preferably 72% cacao), divided
