Easy Butter Salmon Curry

Ingredients
  • 4 skinless salmon fillets
  • 1 tbsp vegetable oil
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 shallot, finely chopped
  • 1 tbsp grated ginger
  • 1 tbsp garam masala paste
  • 100 g/3.5 oz tomato paste
  • ¼ cup/50 ml vegetable broth, or water
  • 250 ml/1 cup crushed tomatoes
  • 250 ml/1 cup cream 20% fat
  • 1 tsp lemon juice
  • 1 tsp each: salt, black pepper, sweet paprika
  • ½ tsp each: ground cumin, ground coriander, turmeric, curry powder, cayenne powder
  • crushed chili flakes, for serving
  • 2 tbsp toasted cashews, for serving
  • 2 tbsp chopped cilantro, for serving
