  • 1 pouch (12 ounces) shredded Pepper Jack or Monterey Jack cheese, or a 12-ounce brick, grated
  • Non-aerosol cooking spray
  • 1 small red onion
  • Pepitas, pumpkin seeds, about ½ cup
