Roasted Chicken with Fennel and Lemon
Ingredients
  • 1 (4-pound) whole roasting chicken
  • 1 tablespoon chopped fresh oregano plus 1 sprig fresh oregano
  • 2 sprigs fresh marjoram
  • 2 garlic cloves, minced, plus 2 garlic cloves, smashed
  • 1 tablespoon olive oil, divided
  • 1 cup dry white wine
  • 1 lemon, cut in half
  • 1 large fennel bulb, trimmed and cut into 8 wedges, plus some of the fronds
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground pepper
  • Herb Pan Gravy
