Classic Jamaican Rice and Peas
Ingredients
  • ¾ cup Dried Kidney Beans
  • 4 cups Water
  • 2 cloves Garlic, chopped
  • ½ package Creamed Coconut
  • 1 Small onion or 2 stalks escallion, chopped
  • 2 tsp  Salt
  • ¼ tsp Black Pepper
  • 1 tsp Dried Thyme
  • A few slices Scotch Bonnet Pepper
  • 2  cups Long Grain or Basmati Rice (rinsed and drained)

  • Soak Kidney beans in 2 cups of water overnight
