Healthy Parmesan Kale Salad
Ingredients
  • 2 tbsp. fresh lemon juice
  • 2 tbsp. olive oil
  • 5 tbsp. grated Parmesan cheese, divided
  • ¼ tsp. Kosher salt
  • ¼ tsp. pepper
  • 1 bunch (about 1 ½ lbs.) Tuscan kale, stems discarded and leaves thinly sliced (about 10 cups)
  • 2 stalks celery, thinly sliced
  • 1 small bulb fennel, quartered, cored, and very thinly sliced
  • ½ c. cup chopped roasted almonds
