Chicken Caesar Salad Lettuce Cups
Ingredients
  • 500g Broad Oaks Farm chicken breast fillets, halved horizontally
  • 100g Berg streaky bacon, chopped
  • ¾ iceberg lettuce
  • 1 pink lady apple, thinly sliced
  • 1 Lebanese cucumber, halved and sliced
  • ¼ cup Colway real mayonnaise
  • 2 tbsp Remano white wine vinegar
  • ¼ cup The Olive Tree extra virgin olive oil
  • 25g Westacre Dairy parmesan block, shaved with a vegetable peeler
  • 1½ Bakers Life Turkish bread rolls, cut into 1.5cm cubes
  • Salt and pepper, to season
