Ingredients
  • 3 cups masa harina ( I used La Mexicana Instant blue corn masa flour)**
  • 1 tsp salt (or slightly less)
  • 2 ⅔ cup warm water (100°F)
Steps
  1. Mix masa harina and salt.
  2. Add iwarm water, a little at a time, mixing as you go. Knead dough very well for 7 to 8 min. until dough is smooth and moist dough, and doesn’t stick to your hands. When you pinch it, you should see no cracks in the dough. Masa is very forgiving.: Add a little water, if too dry, or a little more masa if too wet. Form dough into tight ball.
  3. Pinch off 2 to 3 Tbsp. (golf ball-sized portion) and roll into a nice tight ball. Set ball on sheet pan lined w/ parchment paper. Cover w/ damp towel. This should result in 15 to 20 balls.
  4. Heat nonstick skillet over med. heat.
  5. Cut 2 circles of parchment paper to prevent dough from sticking to tortilla press.
  6. Dab hands in a little bit of water, so they are moist. Remove ball of dough, re-rolling it, and incorporating a bit more water. Place dough ball between circles of parchment paper towards hinge of tortilla press and press it down a little bit.
  7. Close tortilla press and give it a nice firm press. This should give you a 6 to 7” tortilla. Carefully peel off parchment paper.
  8. Gently place tortilla on preheated pan and cook for exactly 45 sec.*** You will see steam rising from the tortilla.
  9. Gently turn tortilla w/ spatula and cook 1 ½ min. on other side. You should see a little bit of browning.
  10. Gently turn tortilla w/ spatula. Give it a little press and it should begin to puff up. Cook 45 sec. more. Timing is everything!
  11. To slightly brown other side (optional), cook 15 sec. more. Eat hot, or add tortilla to towel or tortilla warmer.
  12. Enjoy while fresh and warm!

  • ** Original recipe suggests using Maseca or Bob’s Red Mill
  • *** I used setting 6 on my induction cooktop. Try setting 5 with slightly longer cooking times. 7 is too high.
