Ingredients

  • 1 cup chopped yellow onion
  • 3 cloves garlic , minced
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp vegan worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tbsp flour (all-purpose or gluten-free)
  • 2 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp smoked paprika (optional, for depth)
  • I teaspoon liquid smoke (optional, for more smoky flavor)
  • 1 teaspoon Salt and pepper to taste
  • 1 cup frozen mixed peas and carrots
  • ½ cup frozen corn

  • 4 to 7 large potatoes , peeled and diced
  • ½ cup unsweetened soy milk (or other plant milk)
  • 1 tsp garlic powder
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • 2 tbsp nutritional yeast (optional, for cheesy flavor)
  • 2 tbsp vegan butter (OPTIONAL, for richness) I usually don't add butter.
