Ingredients
  • 1lb dried black beans, sorted and rinsed.
  • 1lg onion, coarsely chopped
  • 1 med green bell pepper coarsely chopped
  • 3 cloves of garlic minced
  • 4 cups veg broth
  • 1tbsp cumin
  • 2 tbsp Chopped chipotle chilies in adobo sauce
  • 3Tbsp Chopped fresh cilantro
  • 2tbsp fresh lime juice
  • 1tsp Salt

  • Diced avocado
  • Sour cream
  • Queso fresco
Steps
  1. Rinse beans and place in a large bowl covering was 2 inches of water. So for 12 hours, drain in discard water.
  2. Combined beans, onion, bell pepper, and garlic and slow cooker. Stir in broth and cumin. Cover and cook on low for 10 hours. Then stir in chipotle, cilantro, lime juice, and salt.
  3. For a smooth texture purée with an immersion blender for 30 seconds or until desired consistency
