- 2 to 3 cups Frisee lettuce or similar
- 2 tablespoons finely chopped shallots
- 2 tablespoon champagne vinegar
- ¼ teaspoon fine sea salt, or to taste

- 4 to 6 tablespoons extra-virgin olive oil
