  • 2 to 3 cups Frisee lettuce or similar
  • 2 tablespoons finely chopped shallots
  • 2 tablespoon champagne vinegar
  • ¼ teaspoon fine sea salt, or to taste
  • 2 teaspoons Dijon mustard (we love Edmund Fallot)
  • 4 to 6 tablespoons extra-virgin olive oil
