Okinawa Taco Rice タコライス
Ingredients
  • ½ lb ground beef (I used 85% lean)
  • 1 clove garlic
  • ½ red onion (¾ goes to taco meat, ¼ goes to salsa)
  • 2 leaves iceberg lettuce
  • 1 Tbsp neutral-flavored oil (vegetable, canola, etc)
  • subheading: Mexican cheese:
  • 3 cups  cooked Japanese short-grain rice (I cooked 1.5 rice-cooker-cups (240 ml uncooked rice *See Notes)
  • subheading: Taco Seasoning:
  • 1 Tbsp chili powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp crushed red pepper flakes
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1 ½ tsp ground cumin
  • 1 tsp kosher/sea salt (I use Diamond Crystal; Use half for table salt)
  • 1 tsp freshly ground black pepper
  • subheading: Salsa:
  • ½ tomato
  • 5 strands cilantro
  • ½ lemon
