Apricot Chicken
  • 1 tbsp olive oil
  • 1 lb chicken tenderloins, breast strips
  • 1 jar apricot jam, sugar free
  • 1 tbsp soy sauce
  • 2 tbsp sriracha chilli sauce
  • 1 tbsp rice wine vinegar
  • cilantro, chopped
  • Zucchini noodles, steamed, to serve
  1. Heat the oil in a large frying pan over high heat.
  2. Cook the chicken for 3 minutes each side or until golden. Transfer to a plate.
  3. Reduce heat to low.
  4. Add the jam , soy sauce , sriracha and vinegar to the pan.
  5. Cook stirring until the jam melts and the mixture is sticky.
  6. Return the chicken to the pan and turn to coat.
  7. Serve the chicken sprinkled with cilantro , with zucchini .
