Rieta's Tomato, Ham, Red Wine & Olives Pasta (Serves 2-3)

Amazingly Tasty

400g canned tomatoes (I especially like the cherry tomatoes that are available in cans from supermarkets)

75g ham, roughly chopped

50g kalamata olives, roughly chopped (not too small)

½ onion, finely chopped

½ stick celery, finely diced

½ carrot, finely diced

2 teaspoons capers, rinsed and finely chopped

1 or 2 anchovy fillets

1 or 2 cloves garlic, finely chopped or crushed

Chives, chopped (fresh if possible)

½ to ¾ tablespoons sugar, to taste

Small pinch Chilli flakes

Red wine (lots!)

Cracked pepper

Basil (optional)

Salt - May not be required due to the saltiness of the other ingredients

Parmesan cheese, to serve

Pasta of choice
