Tilapia with Caribbean Pineapple Sauce
Ingredients

  • 4 tilapia fillets, (1 to 1 ½ lbs. total)
  • ⅛ tsp. salt, or to taste
  • ⅛ tsp. black pepper, or to taste

  • 1 to 2 cup whole wheat or regular couscous

  • 1 head lettuce, any variety, torn into bite-sized pieces (6 to 8 cups)
  • 1 carrot, diced or shredded
  • 1 cup snow or sugar snap peas, chopped
  • ¼ cup roasted peanuts
  • 2 to 4 Tbsp. vinaigrette dressing
