  • 3 large eggs, room temperature
  • 3 ounces bittersweet chocolate, melted, cooled
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¾ teaspoon Diamond Crystal or ½ tsp. Morton kosher salt
  • 2 firm but ripe pears (such as Anjou, Bartlett, or Packham), thinly sliced
  • ¼cup sliced almonds
  • Powdered sugar (for dusting)
