Make-Ahead Cilantro-Lime Green Rice
Ingredients
  • 2½ T vegetable or canola oil (or butter, if you don't need it to be vegan)
  • 1 bunch (about 8) scallions, white and light green parts, finely chopped
  • Kosher or sea salt
  • 1 jalapeno pepper, seeded and minced
  • 2 or 3 garlic cloves, minced
  • 2 C brown basmati rice, rinsed
  • 3 C vegetable stock (or water)
  • 3 packed cups chopped, uncooked greens (baby spinach, kale or chard leaves)
  • 1 C moderately packed cilantro leaves
  • Juice of 2 limes (divided use)
