Butternut Squash Fries
Ingredients
  • I didn’t take exact measurements, but...
  • 1 butternut squash, peeled and hulled Cut into fry shapes Toss in approx 1.5 tbsp avocado oil and 1 tbsp cornstarch A few dashes of seasoning salt Line baking pan with parchment and spread in a single layer Bake at 400 flipping in 15 mins intervals for about an hour - my oven is pretty low heat so maybe 350 for better ovens?? Broil on high for the last 2 mins, flip, 1 min.
  • Added coarse sea salt and dried parsley.
