  • 1 cup dried lentils green or brown
  • 6 ounces mushrooms any, cut into bite-size pieces.
  • 10 ounces winter squash such as butternut, kabocha, delicata, pumpkin, or sweet potatoes. Peeled and cut into ½-inch dice (1.3 cm).
  • 5 cups vegetable broth or more if needed
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 tablespoons balsamic vinegar optional
