  • 2 tablespoons tomato paste
  • 2 cups grated cauliflower - about ½ pound
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 cup sliced olives
  • 3 tablespoons chopped fresh parsley
  • 4 large sweet bell peppers
  • ⅓ cup shelled pistachios - coarsely chopped just enough to create jagged edges
  • Sea salt and freshly ground pepper
