Karen Comb's Cinnamon Roll
Ingredients
  • Karen Combs' Coffee Rolls  (Cinnamon Rolls)

  • These tender and delicious rolls have been a family favorite for decades. This recipe makes many rolls! How many?? Depends on how thick you cut the rolls, but somewhere around 2 dozen.
  •  
  • We always make them at the holidays and give them as gifts to friends.  They are so good and are perfect for that special treat. An added bonus, they do freeze well.
  •  
  • ¾ cup sugar
  • 1 T Salt
  • ¾ cup shortening
  • 1 cup boiling water
  • 1 cup cold water
  • 2 packages dry yeast
  • ½ cup lukewarm water
  • 2 beaten eggs
  • 8 cups flour
  •  
  • Put ¾ cup sugar and 1 Tablespoon salt in a bowl. Melt ¾ shortening and add to above.
  • Add 1 cup boiling water, when sugar is dissolved, add 1 cup cold water.

  • In separate bowl, dissolve 2 packages dry yeast in ½ cup lukewarm water.
  •  
  • When shortening mixture is cool, add 2 beaten eggs and yeast.
  •  
  • Add 8 cups flour and beat until flour is mixed in.
  •  
  • Let rise 1 ½ hours.  Punch down and let rise again until doubled in size, around 40 minutes.
  •  
  • Shape into large, flat rectangle and spread liberally with butter-cinnamon-sugar, cut into rolls, place in greased pan and let rise again, until doubled in size, around 30 minutes. .

  • Bake 350 oven for 20 minutes.
  •  
  • When done, you can spread with confectioner's sugar glaze.

  • 1 ¼ cup confectioner's sugar
  • 3 Tablespoons milk
  • ½ teaspoon clear vanilla extract
  •  
  • Stir milk into sugar, add in vanilla and spread on rolls while warm.
