Asparagus & Brie Parcel Pies
Ingredients
  • 2 tablespoons (30 grams) extra-virgin olive oil
  • 6 large shallots (about 180 grams), peeled, halved, and thinly sliced
  • ¾ teaspoon (4 grams) kosher salt
  • 1 teaspoon (3 grams) freshly ground black pepper
  • 1 tablespoon (15 grams) sherry vinegar
  • All-purpose flour (for rolling)
  • 1 recipe Rough Puff Pastry (see Author Notes)
  • 2 pounds (about 907 grams) thick asparagus, or 1½ pounds (about 570 grams) thin/pencil asparagus, woody ends generously trimmed and discarded (you’re aiming for pieces of asparagus about 5 inches/13 centimeters long)
  • 12 ounces (340 grams) Brie, cut into thick slices
  • Egg wash (1 large egg plus 1 tablespoon water), for brushing
  • Sesame seeds, for sprinkling
