Turkey Veggie "Messy Burgers" with Feta
Ingredients
  • 2 TBSP vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • Kosher salt and freshly ground black pepper, to taste
  • 1 carrot, minced
  • 1 zucchini, diced
  • ⅓ cup corn kernels
  • 4 to 6 whole wheat hamburger buns, toasted, for serving
  • Crumbled feta, for serving, optional
  • subheading: For the tomato sauce:
  • 1 (15-ounce) can tomato sauce
  • 1 to 3 TBSP pureed chipotle peppers in adobo sauce (omit if you don’t prefer the spice)
  • 2 TBSP brown sugar, packed
  • 1 TBSP Worcestershire sauce
  • 1 TBSP tablespoon red wine vinegar
  • 1 tsp chili powder
  • 1 tsp oregano
  • ½ tsp cumin
  • Pinch of cayenne pepper
  • 1 TBSP tomato paste
