Mexican Picadillo (Vegan)
This Vegan Picadillo recipe is an easy, warm, and comforting Mexican dish made from flavored TVP, potatoes, and vegetables cooked in a flavorful tomato-based sauce. Great in tacos, gorditas, or served with rice and beans!
Ingredients
  • 4 Roma tomatoes, halved
  • 1 medium onion, diced
  • 2 cloves garlic
  • 1 jalapeño pepper, stemmed*
  • 1 teaspoon kosher salt, plus more as needed
  • ½ teaspoon dried Mexican oregano
  • ¼ teaspoon ground cumin
  • ½ cup water
  • 2 teaspoons extra-virgin olive oil
  • 1 cup TVP Rehydrated in beef-like broth
  • 1 medium russet potato, diced
  • 1 large carrot, diced
  • ¼ cup frozen peas
