Roasted Tempeh, Sweet Potato, Pepper 1-Pan Meal
Ingredients
  • 1 package tempeh (I used the one made with soy and rice)
  • 2 tablespoons tamari or soy sauce
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon ground ginger
  • 1 teaspoon cumin
  • 1 medium sweet potato
  • 1 yellow bell peppers
  • ½ yellow onion
  • Salt and pepper to taste
