Instant Pot Vegetable Korma
Ingredients
  • 2 cups cubed potatoes
  • 2 cups mixed vegetables - I used frozen corn, peas, carrots, and beans
  • ½ cup cashew nuts
  • 2 Roma tomatoes chopped
  • ½ inch ginger
  • 2 cups water
  • ¾ cup coconut milk
  • ½ teaspoon Kashmiri red chili powder
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon cayenne powder or red chili powder
  • 2 tablespoon olive oil
  • 1 Bay leaf
  • 1 ½ teaspoon salt
  • 1 tablespoon cilantro chopped

  • 3 cloves
  • ½ teaspoon fennel seeds
  • ½ teaspoon cumin seeds
  • 2 teaspoon coriander seeds
  • 2 green cardamom pods
  • ¼ inch cinnamon stick
