Delicious breakfast loaf in 5 minutes. Much lighter texture than a traditional mug cake.
Ingredients
  • 4 large eggs
  • ¼C Two Good vanilla yogurt (or sub. softened cream cheese)
  • ¼C Olive oil
  • 2T almond flour
  • 2T coconut flour
  • 2T Pyure (or 4T erythritol)
  • 1T pumpkin pie spice
  • 1t baking powder
  • ⅛t salt
  •  
  • subheading: Optional butter topping:
  • 2T butter
  • 1t pyure
  • 1t pumpin pie spice
Steps
  1. Use a plastic dish roughly 6x9, lightly oiling can help the loaf pop out
  2. Mix wet ingredients until smooth
  3. Add dry ingredients, mix until smooth
  4. Microwave on high about 5 minutes
  5. subheading: Optional:
  6. Melt butter, mix sweetener and spice, drizzle over top of loaf
  7. Best served warm
