Lina Jebeile's One-Pot Baked Kafta and Rice
Ingredients
  • 2 Tablespoons ghee
  • 500g of kafta meat, portioned into meatballs. Or make your own kafta using minced beef or lamb
  • 1 brown onion, diced
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 Tablespoons tomato paste
  • ½ green capsicum, sliced
  • ½ red capsicum, sliced
  • ½ cup frozen peas
  • ½ cup corn kernels
  • 1 carrot, diced
  • 2 cups basmati rice
  • 1 teaspoon dried oregano
  • 1 teaspoon aleppo pepper
  • 1 ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin
  • 3 cups vegetable stock
