Healthy Apple Muffins
Ingredients
  • 1 ⅓ cups spelt flour (you can also use whole wheat flour, all purpose flour, or a mix)
  • ¾ cup old fashioned rolled oats (rolled oats)
  • ¼ cup almond flour / ground almonds
  • 3 tablespoons brown sugar (use dark brown muscovado if you have it)
  • 1 tablespoon ground flaxseed (milled linseed)
  • 2 teaspoons ground cinnamon
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 2 medium apples - grated (about ¾ cups or 180 grams)
  • 2 medium eggs
  • ½ cup Greek yogurt
  • ½ cup unsweetened apple sauce
  • ¼ cup unsalted butter - melted
