  • 1 ½ pounds heirloom carrots tops trimmed, scrubbed (not peeled), and cut in half lengthwise

  • fine sea salt
  • freshly ground black pepper
  • handful of fresh herbs chopped
  • ¼ cup toasted pecans chopped
