Slow Cooker Red Lentil Dal
Ingredients
  • 1 ½ cups red lentils
  • 1 ½ cups split mug beans or yellow split peas, or just use all red lentils
  • 6 cups vegetable broth or water
  • 2 x 400g cans diced tomatoes
  • 1 large yellow onion diced
  • 4 garlic cloves minced
  • 2 Tbsp fresh grated ginger
  • 1 Tbsp ground turmeric
  • 3 green cardamom pods crushed / split open
  • 1 bay leaf
  • 2 tsp cumin seeds
  • 2 tsp brown mustard seeds
  • 2 tsp fenugreek seeds
  • 1 tsp fennel seeds
  • 1 tsp salt
  • ¼ tsp freshly ground black pepper
