Ingredients
  • Mina A Joshi Recipe: 2 grated mangoes . I just got the hardest ones I could find. I red chili and 4green chilies all cut finely .1 tsp salt, 4 tsp sugar. 4 tbls lemon juice . Sauté all together for a minute or two . This will release a bit of water . Then change to manual pressure for 4 minutes . This was enough to cook the mangoes . Mix well . Next stage is optional : Heat 1 tbls oil. Add a couple of cloves and 2 to 3 cardamom plus 1 tsp cumin seeds . Once the cumin goes brown - add to the mango mixture . If it feels loose - sauté for a minute . I didn't need to . Once cool - transfer to sterilised bottles . You can reduce the chilies or use chili flakes if you like . Taste and add lemon or sugar if needed. I didn't as we like hot stuff . The chutney does taste better once cool. Hope I have put all the instructions.
