Ingredients
  • I’ve updated my pictures and added a tablespoon of fresh grated ginger to these cookies-
  • Trying to drop 10 pounds so I made these breakfast cookies without blending dates into one cup of canned pumpkin. To which I added to one cup of rolled oats, maple extract, and pumpkin pie spice. I used a mandolin to thinly slice a large apple into 8 little piles on a cookie sheet and covered them with the mixture. I cooked them at 375 for 30 minutes then flipped and cooked 5 more minutes. So good with a hot cup of tea. They don’t look that great but I’m obsessed with them
  • note: Also amazing is two large ripe mashed bananas instead of the canned pumpkin
