CYPD Red Chili Enchiladas

Ingredients
  • 1 Pound Ground turkey
  • 20 Corn Tortillas
  • 1 Pound shredded cheddar cheese
  • Enchilada Sauce (See Recipe)
  • 1 Bunches of Green Onion, Chopped
  • 13.5 Ounces Canned Green Chili Peppers
  • 1 Cup of Black Beans
  • ΒΌ Onion, Chopped
  • 2 Mixed Bell Peppers, Chopped
  • 1 Lb. of Frozen Corn
  • Taco Seasoning
Steps
  1. Saute and season ground turkey with taco seasoning until cooked through.
  2. Preheat oven to 400 degrees
  3. Spray foil pans with Olive Oil Spray
  4. Reserve a small bowl of green onion
  5. Mix together the remaining green onion, chili peppers, black beans, onion, bell peppers and corn; season with taco seasoning. Add ground turkey and mix.
  6. subheading: Layer in the following order, four times:
  7. Tortillas (Dip tortillas in enchilada sauce before stacking)
  8. Veggie and turkey mixture
  9. Cheese
  10. Top the enchilada stack with sauce and cheese.
  11. Bake until bubbly - 15 to 25 minutes.
  12. Garnish with chopped green onion.
