Ingredients
  • 2 tbsp oil
  • 1 onion, sliced
  • 3 to 4 lbs chicken, lightly frozen, cute bite size
  • 1 tbsp garlic powder
  • 2 tsp smoked paprika
  • 1 ½ tsp chili powder
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp chicken bouillon powder
  • 4 tbsp butter, sliced
  • 2 cups (1 pint) heavy cream
  • subheading: Thickening agent:
  • 2 tbsp corn starch
  • 2 tbsp cold water
Steps
  1. Saute onion in oil. When translucent, add chicken.
  2. If not using frozen chicken, add a few tablespoons up to ¼ cup water.
  3. Sprinkle seasonings on top of chicken. Place slices of butter on top.
  4. Seal pot and cook on hi for 9 mins. Immediate release once done.
  5. Add heavy cream to pot. Stir to breakup chicken pieces.
  6. Thicken with corn starch slurry. Bring to boil to thicken the sauce.
  7. subheading: How to prepare zoodles:
  8. Cut zucchini into noodles (use a Spiralizer), place the zucchini in a bowl, add a sprinkle of seasoned salt, cover with plastic, microwave for 1 to 2 minutes, drain excess water.
Notes
  • Serve over pasta or zoodles (zucchini cut into noodles)
