Ingredients
  • 1 small onion, chopped about 1 cup
  • 2 stalks of celery, chopped about 1 cup
  • 1 small apple, chopped about 1 cup or 1 large carrot
  • 1 tablespoon ginger, minced
  • 1 ½ tablespoons yellow curry powder
  • 1 bay leaf
  • ½ teaspoon black pepper
  • ⅛ teaspoon cayenne (adjust to taste)
  • 1 tbs honey (to taste)
  • 2 teaspoons salt (adjust to taste)
  • 2 ½ cups flavorful vegetable broth or low sodium chicken broth
  • ½ can coconut milk or to taste
  • 2 cups frozen peas (one large bag)
