  • 1 boneless lamb shoulder
  • 2 tbs olive oil
  • 2 carrots, coarsely chopped
  • 2 sticks celery, coarsely chopped
  • 2 brown onions, coarsely chopped
  • 1 bulb garlic, cloves peeled
  • 1.5 litres chicken stock
  • subheading: PICKLED CABBAGE:
  • 250ml white wine vinegar
  • 100ml water
  • 200g caster sugar
  • 2 tsp salt
  • 1 tsp mustard seeds
  • 1 cinnamon quill
  • 5 peppercorns
  • 2 star anise
  • 250g red cabbage, thinly sliced
  • subheading: YOGHURT FLATBREAD:
  • 1kg yoghurt
  • 1.2 kg bakers flour
  • 60ml olive oil
  • 2 tsp salt
  • subheading: TAHINI DRESSING:
  • 4 garlic cloves, peeled
  • 100ml lemon juice
  • 250g tahini white
  • 200ml water
