Ingredients
  • 200g bread, torn into very small pieces
  • 3 large brown onions, finely sliced (about 500g)
  • 5 to 6 spring onions (scallions), trimmed and cut diagonally in ½cm pieces
  • 100g gram flour (besan)
  • 2 tsp minced ginger
  • 1 to 2 large red chillies, cut into fine rings
  • 1 tsp coriander seeds, coarse ground
  • 1 tsp ajwain, rubbed between your palms
  • ¼ tsp turmeric
  • 1 tsp kasoori methi, rubbed between your palms
  • 1 tbsp lemon juice
  • ¼ tsp baking powder
  • 1 tsp salt
  • 1 tbsp oil
  • 2 to 3 tbsp water (if required)
  • Enough oil for deep frying
