Star Wars: Spicy Mandalorian Stew

Ingredients
  • 2 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 pound boneless, skinless chicken thighs, roughly chopped
  • 1 medium red apple, cored and diced
  • 3 tablespoons all-purpose flour
  • 2 carrots, roughly chopped
  • 1 purple potato, roughly chopped
  • 2 teaspoons garam masala
  • 2 tablespoons curry powder
  • 2 tablespoons tomato paste
  • 1½ tablespoons sugar
  • 2 tablespoons soy sauce
  • 4 cups chicken broth
  • ½ cup pearl couscous
Steps
  1. Heat the olive oil in a large saucepan over medium heat, then add the onion, garlic and ginger.
  2. Cook for a couple of min, stirring occasionally, until soft and fragrant, then add the chicken. Stir occasionally until the meat is browned on all sides.
  3. Add the remaining ingredients and cook, covered, for about 30 min, until the vegetables are soft.
