Smoky Salty Caramel Cupcakes

  1. Ok fellow smokers.....For the vanilla cupcakes, use whatever batter you prefer. Cold smoke the batter in baking tins for 30 minutes. Make sure you cold smoke all your items or they will not come out right, you don't want any heat until you're ready to bake. For the caramel, I just used the square caramels. Cold smoke those for 20 minutes. Cold smoke your sea salt and heavy cream for 30 minutes. After smoking.. Remove everything and Preheat to 350..then bake cupcakes for 14 minutes. Insert a toothpick in the middle of the cupcake to make sure they're done. If you pull out your toothpick and your cupcakes are still wet, add another 2 to 3 minutes. Mix heavy cream and caramel together in a saucepan on med heat. Once nice and hot, mix untill you get a smooth texture. Once everything is done allow them to cool before you frost your cupcakes.
  2. Buttercream
  3. Half a stick of real butter (room temperature)
  4. 4 cups powdered sugar
  5. 2 teaspoons real vanilla
  6. ¾ cup heavy cream
  7. Cream butter in a mixer, then add the rest of your ingredients and mix until smooth and creamy.

  9. NOTE your heavy cream and salt will turn color from the smoke.
